We were dismayed to read the letter to the editor by Heidi Fox [“Prisoner of Starbucks?,” July 18] concerning filtered water in local coffee shops in Asheville.
We, like many other locally owned and operated coffee shops in Asheville, do filter the water at the shop. In fact, we change the filters several times a year and believe that the coffee tastes fresher and is better for our customers because of it. Many of our customers will ask us why their coffee does not taste as good at home. Our answer is simple: We filter our water.
Although we spend two full days (16-plus hours) to train our staff to make the drinks the way we want them made and to provide the best customer service possible, we had never thought about talking to them about the filtration system until we read the letter from Ms. Fox. Thank you for pointing that out to us.
So, Ms. Fox, we would be happy for you to come to our shop for either your iced tea or your cup of coffee. We would be happy to tell you: “Of course, we filter our water. Why would you ask such a silly question?”
