2 cloves garlic
1/4 cup rice vinegar
1/4 lime juice
1 1/2 cup light olive oil
3/4 tsp salt
3/4 tsp fresh ground pepper
1/4 cup of finely chopped red onion or shallot
1/4 cup chopped cilantro
1 1/2 tsp of ground cumin
Put all ingredients, except for olive oil, in a food processor and puree. Add oil in thin stream until fully incorporated.

Is this Chai Pani’s actual recipe? Because I made it and it did not seem exactly like the dressing served in the restaurant. Not as sweet, and not as fragrant, but still OK. I found the recipe because I was trying to look online to see if Chai Pani sold the dressing by the bottle. I felt a little guilty about trying it- because I don’t think you should use folks recipes unless they OK it, especially if they are professionals….and I couldn’t tell if Chai Pani published this. But then it didn’t seem quite right anyway…..but maybe that’s just the difference in the oil, vinegar, etc. that I used compared to what they use? I hope this recipe was OK’d for use by Chai Pani or just guessed at by someone, not published without permission! I suppose I should just buy some dressing “to go” the next time I’m at Chai Pani, if they’ll do that.
