At the Lobster Trap in downtown Asheville, winter vegetables and lobster bisque have made way for grilled salmon roasted on a Maine hickory plank with a shagbark-hickory syrup glaze, and a Sunburst Farms trout that shares a plate with sea beans.

Their recipe is up against four other finalist a.m. treats drawn from submissions by bed-and-breakfasts across the country in Select Registry’s Inn-Credible Breakfast Cook-Off.
